VEGETABLE BAKE 
1 c. chopped ham, chicken or turkey (if desired)
2 c. chopped broccoli
1/4 c. chopped carrot
1 c. chopped cauliflower
1 med. onion thickly sliced
2 eggs
1 c. milk
1/2 c. shredded mozzarella
1/2 c. shredded Monterey Jack
1 tsp. each salt, parsley, and garlic powder

Place vegetables in saucepan with 1 1/2 c. water. Cover and heat to steam. Vegetables are ready when water has evaporated. Be careful not to burn.

Spread vegetables in 9 x 9 glass baking dish. Top with chopped meat of choice. Beat eggs, stir in spices, milk, and Monterey Jack cheese. Pour over vegetables. Bake at 350 degrees for approximately 30 minutes or until set.

Lower milk by 1/4 cup if meatless. Almost any vegetables can be used. Serves 6
