SWEDISH RYE BREAD | |
In a large bowl mix: 2 c. each of hot water and cold water (4 c. total) 3 tbsp. butter or oil 1 tbsp. salt 3 pkg. yeast 3 c. rye flour 2 c. all purpose flour Beat with mixer on low speed until similar to pancake batter and let rise for 1 hour. Add the following: 1/2 c. honey 1/2 c. molasses Beat into mixture. Add 1 cup rye flour then add enough flour into the mixture to knead (5 to 7 cups all purpose flour). Knead dough for about 10 minutes, grease bowl and return dough to bowl. Let rise until double in size. Mash down and divide it into 4 loaves (grease loaf pans). Let rise again about 1 hour (should be double in size). Bake at 350 degrees for about 25 to 30 minutes. Bowl needs to be extra large or dough will overflow when rising. Whole wheat flour can be substituted for some of the all purpose flour. |
