BASIC VEGETABLE CASSEROLE 
1 qt. (2 lbs.) vegetables (cubed potatoes, mixed vegetables, green beans, for example)
1 can cream of mushroom soup
1 lb. Velveeta cheese
1/2 stick butter, melted
1/2 c. chopped green pepper (opt.)
1/2 c. chopped onion (opt.)
Salt & pepper to taste

Drain vegetables of choice. Mix with remaining ingredients in a large casserole and bake, covered in 375 degree oven for about 1 hour.

NOTE: This can be made into a main dish casserole by adding 1 pound browned, drained ground beef or 2 (6 1/2 oz.) cans of tuna, drained.
