BLUEBERRY PANCAKES | |
2 c. buttermilk "Bisquick" mix 1 c. milk 2 eggs Mix Bisquick, milk and slightly beaten eggs with wire whip until blended. Add about 1 cup fresh (or frozen, thawed and drained) blueberries to batter. Bake on hot griddle. Can also drop a few berries on each pancake after poured on griddle instead of mixing in batter (avoids bruising berries). Makes 16 (4 inch) pancakes. |
