WHOLE WHEAT PANCAKES WITH
BLUEBERRIES
 
1/2 c. wheat germ
2 c. whole wheat flour
2 tsp. baking powder
1 tbsp. brown sugar
1 tsp. salt
2 lg. eggs
2 1/2-3 c. fresh milk (or soy milk)
2 tbsp. oil
Fresh or frozen blueberries to taste
Sunflower seeds

Stir together all dry ingredients. Beat eggs slightly in a separate bowl and add milk; then add to dry ingredients and stir briefly. Stir in oil with a few strokes.

Heat griddle, grease slightly. After pouring batter into griddle, add desired amounts of blueberries and sprinkle with sunflower seeds. Turn when edges are slightly dry. Makes 18 pancakes.
