CHICKEN BREAST SCAMPI | |
2-3 lbs. boneless chicken breast 1/2 lb. butter 4 cloves garlic, minced 2 whole scallions, minced 1 tbsp. chopped parsley 1/2 tbsp. fresh dill (1/4 tsp. dry) 1/2 tbsp. oregano 1/2 tsp. salt 1/2 tsp. pepper Cut chicken into chunks and place in 9"x13" dish. In a frying pan melt butter over low heat. Add garlic, scallions, parsley, dill, oregano, salt and pepper. Cook on low for 2 to 3 minutes. Pour over chicken. Bake at 350 degrees for 10 minutes. Separate pieces and cook 10 minutes more. Turn on broiler to brown chicken for 3 to 4 minutes. Serve over rice or linguini. |
