CHICKEN BREAST SCAMPI 
2-3 lb. boneless chicken breast
1/2 lb. butter
4 cloves garlic
2 whole scallions
1 tbsp. parsley
1/2 tbsp. dill
1/2 tsp. salt
1/2 tsp. pepper
1/2 tbsp. oregano

Cut chicken breast into 2 oz. chunks. Place in 9x13 inch baking dish. Melt butter in pan over low heat; add garlic, scallions, parsley, dill, oregano, salt and pepper. Cook on low heat for 2 minutes. Separate chicken pieces and cook for 10 minutes. Bake in 350 degree oven for 10 minutes, turn on broiler and brown 3 to 4 minutes. Serve over rice or thin spaghetti.
