BLUEBERRY BARS | |
1 3/4 c. sugar 1 c. butter 4 eggs 1 tsp. vanilla 3 c. flour 1 1/2 tsp. baking powder 1/2 tsp. salt 1 (21 oz.) can blueberry pie filling ICING: 1 1/4 c. sifted powdered sugar 1 tbsp. melted butter 3 tbsp. lemon juice Cream butter and sugar until light and fluffy. Add eggs and vanilla. Beat well. Stir together flour, baking powder and salt. Add to creamed mixture, stirring until well blended. Spread half the dough on an ungreased 15 1/2" x 10 1/2" pan. Place blueberry pie filling on top of dough. Drop the rest of the dough by teaspoon onto blueberry filling. Bake at 350 degrees for 30 to 35 minutes. While bars are still warm spread with lemon icing. Blend the ingredients for the icing until they are smooth. Drizzle over bars. |
