COWBOY STEW 
1 1/2 lbs. ground beef
1 large onion, chopped
2 cans Ranch style beans
1 can corn (not creamed corn)
1 can Rotil tomatoes (diced)
1 lb. grated cheddar cheese
Salt and pepper to taste

Brown meat first, then add chopped onions for a minute and stir. Ad beans, corn and Rotil tomatoes; stir. add grated cheddar cheese last. Simmer until it is all "mushy". Serve with cornbread and a fresh green salad.
