COWBOY STEW | |
6 slices bacon 1 c. sliced onion (1 lg.) 1/2 c. chopped green pepper 1 clove garlic, crushed 1 1/2 lbs. ground chuck or round 2 cans (1 lb. 13 oz. each) tomatoes 1 tsp. salt 1/4 tsp. pepper 1 tbsp. chili powder 1 can (12 oz.) whole kernel corn, drained 1 can (about 1 lb.) red kidney beans, drained 2 c. cubed, pared potatoes Cook bacon until crisp; drain on paper towels; crumble; reserve. Saute onion, green pepper and garlic in bacon drippings until tender. Add ground beef; cook until well browned, breaking up with fork as it cooks. Add tomatoes, salt, pepper and chili powder; cover; simmer 30 minutes. Add vegetables; simmer 15 minutes. Sprinkle with bacon. Makes 8 servings. |
