CHEESY GRITS 
4 1/2 c. boiling water
1 tsp. salt
1 c. quick grits
3/4 stick butter
3/4 pkg. sharp cheese
2 eggs & milk to make 1 c.

Stir grits into boiling water and salt. Cook 5 minutes, stir several times. Add 3/4 stick butter and 3/4 package of cheese. Stir until melted. Put 2 eggs in cup, fill with milk to make 1 cup. Beat, then add to the grits mixture. Pour into 9 inch casserole. Bake at 350 degrees for 45 minutes. May top with crushed corn flakes and 1/4 stick butter and cheese if desired.
