NICK'S HAM AND CHEESE OMELET 
6 eggs
1/4 green bell pepper, chopped
2 fresh mushrooms, chopped
1/4 lb. sliced ham, finely chopped or
1 (5 oz.) can Hormel ham, finely chopped
1 cup grated cheese
salt and pepper, to taste

Beat eggs in a mixing bowl then add chopped bell pepper, mushrooms and ham.

Pour into a large frying pan. Season with a dash of salt and pepper. Cook on medium heat until eggs are solid enough to flip (best to divide into sections with spatula before flipping).

Add grated cheese to the top of omelets and cook until the cheese has melted.

Remove from pan and serve!
