COCONUT MACAROONS 
1 lg. egg white
Pinch of salt
1/4 tsp. vanilla
1/4 tsp. cream of tartar
1/2 c. powdered sugar
Enough flaked coconut to make batter stiff (about 2 c. coconut)

Beat egg white until foamy. Add salt and cream of tartar. Beat until stiff. Add sugar and beat very stiff. Stir in coconut. Drop by spoonfuls on Teflon cookie sheet. Bake 300 to 325 degrees for 10 to 15 minutes.
