COCONUT MACAROONS 
2 egg whites
1/2 tsp. vanilla
2/3 c. sugar
1 (3 1/2 oz.) can (1 1/3 c.) flaked coconut

Preheat oven to 325 degrees. Beat egg whites with dash of salt and the vanilla until soft peaks form. Gradually add sugar, beating until stiff. Fold in coconut. Drop by rounded teaspoons onto greased cookie sheet. Bake in slow oven, 325 degrees, about 20 minutes. Makes about 1 1/2 dozen.
