SWEET - SOUR PORK | |
2 tbsp. butter 2 lb. boneless pork loin, cut in 1-inch cubes 1 (1 lb. 4 oz.) can pineapple chunks 1/2 c. water 1/2 c. vinegar 1/2 c. brown sugar 2 tbsp. cornstarch 1 tsp. salt 1 tbsp. soy sauce 3/4 c. thinly sliced green pepper 1/2 c. thinly sliced onions Brown meat in butter in heavy skillet. Drain pineapple (save juice). Combine water, vinegar, brown sugar, cornstarch, salt, soy sauce and 1 cup pineapple juice. Cook until clear and thickened. Add meat (pineapple, green pepper and onions added later). Cover and cook over low heat about 1 hour or until fork-tender. Before serving: Reheat mixture until simmering. Add green peppers, onions and pineapple chunks. Cook about 2 minutes. Serve with cooked rice. Serves 4 to 6. |
