ENCANELADOS 
3 eggs
3/4 c. sugar
1/2 c. flour
1/2 c. "chuno" flour (or potato flour)
1 tsp. baking powder
1 tsp. vanilla
1 tsp. cinnamon
1/2 c. confectioners' sugar

SYRUP:

1 c. sugar
1/2 c. water

Mix eggs with 3/4 cup sugar until thick. Add vanilla, flour, chuno and baking powder, all sifted. Mix gently. Pour into a buttered baking dish or pan. Bake in low oven for 20 minutes. Let cool. Cut in half and fill with caramelized condensed milk (dulce de leche). Sprinkle with cold syrup made of 1 cup sugar and 1/2 cup water cooked to dissolve sugar, and then cooled. Cut into squares and coat with cinnamon mixed with confectioners' sugar.
