CARROT CAKE | |
1 1/2 c. oil 2 c. sugar 5 eggs 2 1/4 c. flour 2 tsp. baking powder 1 tsp. baking soda 2 tsp. cinnamon 1 tsp. salt 2 tsp. vanilla 2 c. carrots, shredded 1 c. crushed pineapple, drained 1/2 c. nuts, chopped 1 c. raisins 1 c. coconut Beat oil and sugar together. Beat in eggs, 1 at a time; beat well. Sift dry ingredients together and add to liquid mixture. Add vanilla, pineapple, carrots, nuts, raisins and coconut. Pour the batter into a 9 x 13 inch cake pan and bake at 350 degrees for 35 to 40 minutes. Frost with cream cheese frosting. |
