MEAT, ONION AND MASHED POTATO
CASSEROLE
 
2 lg. onions, sliced
1 tsp. sugar
1 tbsp. butter
3 c. well seasoned mashed potatoes
6-8 slices pot roast, roast beef or meat loaf
1 c. frozen green peas
1 (10 1/2 oz.) can beef gravy or 1 c. leftover gravy
1-2 tbsp. grated Parmesan cheese
Paprika

Put onions in hot dry skillet. Sprinkle with sugar and stir fry over medium heat until onions start to brown. Add butter and cook until onions are tender, about 8 minutes longer, stirring occasionally. Remove from heat. Spread half the mashed potatoes in greased 2 quart shallow baking dish. Arrange meat on top, then onions, peas and gravy. Cover with remaining mashed potatoes and sprinkle with Parmesan cheese and paprika. Bake in 375 degree oven until heated through and top is golden, 30 to 40 minutes. Makes 4 to 6 servings. NOTE: In microwave oven assemble as above. Cook 10 to 12 minutes or until heated through.

Since microwave ovens vary in power, you may need to adjust your cooking time.
