PERSIMMON COOKIES 
1/2 c. solid vegetable shortening
1 c. sugar
1 egg
2 c. flour
1 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. nutmeg
1/4 tsp. salt
1 c. persimmon pulp
1 c. golden raisins
1 c. nuts
1/2 c. coconut

Cream shortening and sugar. Add egg and beat well. Sift flour, soda and spices together and add alternately with pulp and raisins, nuts and coconut. Drop onto greased cookie sheet 2 inches apart. Bake at 350 degrees for 10 to 15 minutes until brown.
