MOLDED SPINACH SALAD 
1 pkg. (3 oz.) lemon gelatin
1 c. boiling water
1/2 c. cold water
1 1/2 tbsp. vinegar
1/2 c. mayonnaise
1/4 tsp. salt
1/2 c. frozen spinach, thawed very thoroughly drained or fresh spinach
3/4 c. very thoroughly drained cottage cheese
1/2 c. finely chopped celery
1 tbsp. minced onion
Salad greens

Dissolve gelatin in boiling water. Add cold water, vinegar, mayonnaise and salt. Beat with rotary beater or mixer until smooth. Refrigerate until thicken. Beat again until fluffy. Fold in spinach, cottage cheese, celery and onion. Pour in 1 1/2 quart ring mold. Refrigerate until firm. Invert mold on salad greens.

Variation: Lime gelatin may be substituted for lemon gelatin and broccoli for the spinach.
