CHOCOLATE MINT CHEESECAKE 
CHEESECAKE:

2 (3 oz.) boxes Junior Mints
3 (8 oz.) pkgs. cream cheese
2/3 c. sugar
3 eggs
1 tsp. vanilla extract

Place mints in freezer. Preheat oven to 350 degrees. With mixer, combine cream cheese and sugar until smooth. Add eggs one at a time, beating well after each one. Stir in vanilla. Beat the heck out of it!

Pour into crust. Chop cold mints and sprinkle on top. Bake 45 minutes to 1 hour. Cool on wire rack, then chill several hours. Serves 8-12.

CRUST:

2 c. graham cracker crumbs
1/4 c. sugar
6 tbsp. melted butter

Combine ingredients until well blended. Press into bottom and up sides of a springform pan.
