ENCHILADA SAUCE 
1/3 c. oil
1 clove garlic
3 tbsp. flour
4 tbsp. hot water
1 c. tomato sauce
2 tbsp. red chili powder

Heat oil and garlic in saucepan, add flour and stir until lightly browned. Dissolve chili powder in 4 tablespoons water and stir into flour mixture. Continue stirring and add tomato sauce and enough water to make a medium-thick sauce. Add salt to taste and simmer about 5 minutes.
