ENCHILADA SAUCE 
1/2 c. oil
1/2 c. flour
1 1/2 to 2 tbsp. chili powder
2 tsp. salt
4 c. lukewarm water

Heat oil in large saucepan. Brown the flour in the oil. Add chili powder and salt, simmer 2 minutes. Lower heat, add water slowly. Simmer 5 minutes. Great with enchiladas, tamales or burritos.
