PUMPKIN LOAF 
3 eggs
2/3 c. pumpkin
3/4 c. flour
1 c. sugar
1 tsp. baking soda
1/2 tsp. cinnamon

FROSTING MIX:

3 tbsp. Crisco or butter
8 oz. cream cheese
3/4 tsp. vanilla
1 c. powdered sugar

Preheat oven to 375 degrees. Mix eggs, pumpkin, flour, sugar, baking soda and cinnamon in large bowl. Beat for 2 minutes and set aside.

Bake mix on cookie sheet. Spray cookie sheet with Pam and lay wax paper over top, then proceed to spread pumpkin mix evenly on the sheet and place in oven for 10 to 15 minutes.

While cake is baking, mix all frosting ingredients together with hand mixer until creamy.

Take a separate sheet of wax paper and spread on counter. Sprinkle confectioners' sugar; peel off wax paper with pumpkin mix on and lay upside down on wax paper already on counter.

Spread frosting mix on pumpkin mix, roll pumpkin so frosting is on the inside, refrigerate until cold, cut and serve.
