BAKED CORN PUDDING 
Preheat oven 325 degrees.

2 (10 oz.) pkgs. frozen corn, thawed and drained
3 eggs, well beaten
1 tsp. grated onion
1/4 c. all purpose flour
2 tsp. salt
1/4 tsp. pepper
1 tsp. sugar
Dash nutmeg
2 tbsp. melted butter
2 c. evaporated skim milk
4 oz. pimento, drained and chopped

In a 1 1/2 quart shallow baking dish, combine corn, beaten eggs and onion. Stir in flour and seasonings. Add melted butter, milk and pimento. Mix. Put the baking dish into a pan with enough water to make a 1 inch depth around dish. Bake 1 hour uncovered or until firm and an inserted knife comes out clean. Serves 8.
