IRISH SODA BREAD | |
1 1/2 c. buttermilk 2 tbsp. butter, melted 1 lg. egg, lightly beaten 1 1/2 c. dark seedless raisins 3 c. all-purpose flour 2/3 c. sugar 1 tbsp. baking powder 1 tsp. baking soda 1 tsp. salt Preheat oven to 350 degrees. Grease 9x5 inch loaf pan; set aside. Place buttermilk, butter, egg and raisins in medium bowl. Combine dry ingredients in large bowl and toss with 2 forks about 1 minute. Add buttermilk mixture and mix until combined. Spoon into prepared pan. Bake 50 to 55 minutes (should sound hollow when rapped). Leave in pan 1 minute, then cool completely on wire rack. Makes 1 loaf, about 18 (1/2 inch) slices. |
