CHILI CHEESE CASSEROLE 
3 eggs
2 c. shredded Cheddar cheese
Chopped green onion
2 (4 oz.) cans green chilies
1 (2 1/2 oz.) can sliced black olives
2 c. chopped tomatoes (2-3 med.)
1 c. milk
1/2 c. Bisquick
1/2 tsp. salt

Remove stems and seeds from chilies, rinse and place in a greased baking dish (8 x 8 x 2 inches). Top with tomato, chopped onion and olives and sprinkle with cheese. Beat eggs, milk, baking mix and salt until foamy. Pour over vegetables. Bake uncovered at 350 degrees for 40-45 minutes or until golden brown. Serve with salsa or sour cream. Note: This is perfect for a brunch. Serves 6.
