PINEAPPLE RAISIN COOKIES 
1 c. brown sugar, firmly packed
1/2 c. soft butter
1 egg, unbeaten
1 tsp. vanilla
1/2 c. raisins
3/4 c. crushed pineapple, undrained
2 c. sifted all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 c. chopped walnuts

Beat together sugar, butter, egg and vanilla until fluffy. Add raisins and pineapple. Sift in flour with baking powder, soda and salt; mix well. Stir in nuts. Drop by spoonfuls 2 inches apart on greased cookie sheets. Bake at 375 degrees for 12-15 minutes, or until lightly browned. Makes about 4 dozen.
