PINEAPPLE-RAISIN COOKIES | |
1 c. (packed) golden brown sugar 1/2 c. soft butter 1 egg 1 tsp. vanilla 3/4 c. undrained crushed pineapple 1/2 c. raisins 2 c. sifted all-purpose flour 1 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1/2 c. chopped walnuts Combine brown sugar, butter, egg and vanilla in bowl; beat until fluffy. Add pineapple and raisins. Sift flour with baking powder, soda and salt. Add to pineapple mixture; mix well. Stir in walnuts. Drop by spoonfuls 2" apart on greased cookie sheet. Bake in 375 degree oven for 12 to 15 minutes or until lightly browned. Yield: 4 dozen. |
