MALFATTI WITH MEAT SAUCE 
1 c. cooked chopped spinach, strained
1 1/2 c. ricotta cheese
2 eggs, beaten
1/4 c. minced onion
1 clove garlic, crushed
1 c. dry bread crumbs
1/4 c. grated Parmesan
1 tsp. basil
1/4 tsp. nutmeg

MEAT SAUCE:

1 lb. ground beef (with cheese)
1/2 c. chopped onion
16 oz. tomato sauce
Bouillon cube
1/2 c. dry wine
1 1/2 c. boiling water
1/2 tsp. oregano

Mix ingredients (except sauce) well and then chill. Form fingers with dough and roll in flour. Place on cookie sheets, cover and chill.

Make sauce by browning meat with onion. Pour off fat. Dissolve bouillon in water. Add meat, tomato sauce, red or white wine and oregano. Simmer 15 minutes. Boil malfatti in 2 inches of water 3-4 minutes. Remove to serving platter. Cover with meat sauce and serve.
