PATRAIT PEACH PIE | |
4 eggs, slightly beaten 9 inch unbaked pie shell 1 (16 oz.) can sliced peaches, drained well 1/3 c. sugar, divided 1/2 tsp. cinnamon 1/4 tsp. nutmeg 1/4 c. flaked coconut 1 1/2 c. scalded milk 1 tsp. vanilla 1/4 tsp. salt Arrange peaches evenly on bottom of pie shell. Combine 1 tablespoon sugar, 1/4 teaspoon nutmeg, 1/2 teaspoon cinnamon, and 1/4 cup coconut; sprinkle over peaches. Beat together eggs, remaining sugar, scalded milk, vanilla, salt; pour over peaches. Bake in preheated 400 degree oven for 30-40 minutes or until knife comes out clean. Cool and chill before serving. |
