BAKED FRENCH TOAST 
1/4 c. butter
1/3 c. sugar
1/4 tsp. cinnamon
1 tsp. grated orange rind
4 eggs, slightly beaten
2/3 c. orange juice
8 slices white bread

Turn oven to 400 degrees. Place butter in 10x15 pan and put in oven to melt. Remove pan from oven.

Combine sugar, cinnamon and grated rind. Sprinkle evenly in pan.

Mix eggs and juice. Dip bread in egg mixture, soaking well. Arrange evenly in pan. Spoon any remaining liquid over bread. Bake in 400 degree oven about 25 minutes. Let stand 1 minute, then lift out and turn over (sugar side up) onto hot platter.

May be frozen and reheated in oven.
