MARLA'S FROZEN FRUIT SALAD | |
A German family tradition! This is a "Dessert" like fruit salad and is obviously a large recipe so put extras back in the freezer after Thanksgiving and get back out for Christmas. 1 can peaches 1 can pears 1 can Mandarin oranges 1 can pineapple 1/2 jar Maraschino cherries, sliced thinly 2 whole bananas, sliced 2 apples (I like pacific rose apples but any will work) 1/2 pkg. mini marshmallows 1/2 pkg. coconut flakes (optional) 1 quart whipping cream confectioners' sugar, to taste (I use 1 or 2 tbsp.) 1-2 tbsp. mayonnaise (or Miracle Whip) Chop fruits into small bite size pieces. Mix first 9 ingredients in a large bowl. Add whipping cream (whipped with some Maraschino cherry juice and a couple dots of red food color until light pink in color). By hand, stir in confectioners' sugar to taste Then stir in mayonnaise or Miracle Whip (this keeps the salad from crystallizing and the texture smooth and creamy and is hardly noticed in the taste). Place all in one or two 9x13-inch glass pans and place in freezer overnight. Remove from freezer 1 hour before serving, let stand at room temperature until it can be sliced like a cake into serving size pieces. Enjoy! Submitted by: Marla Jacoby |
