CHERRY, BLUEBERRY OR APPLE COFFEE CAKE | |
1 c. butter 1 3/4 c. sugar 1 can pie filling (cherry, apple or blueberry) 1 1/2 tsp. baking powder 1 1/2 tsp. vanilla 1/2 tsp. salt 3 c. flour 4 eggs FOR ICING: 2 tbsp. butter 1/4 tsp. vanilla 2 tsp. milk Powdered sugar Cream butter and sugar. Add eggs, one at a time. Beat well. Add remaining ingredients, except pie filling, and mix well. Spread 3/4 of batter on a greased jelly roll pan. Top with pie filling. Drop remaining batter over top. Bake at 350 degrees for 25 to 35 minutes. Cool slightly and drizzle thin icing over cake. ICING: Warm butter, milk and vanilla. Add powdered sugar to make a thin icing. |
