CHEESE CUPCAKES 
3 (8 oz.) pkg. cream cheese
1 c. sugar
5 eggs
1 c. sour cream
1/4 c. sugar
1/4 tsp. vanilla

Cream 3 packages cream cheese with 1 cup sugar. Add 5 eggs. Beat well, one at a time. Pour into paper lined muffin tins. Fill 3/4 full. Bake 30 minutes at 300 degrees (light brown will not rise). Cool. Fill hole in center with topping.

TOPPING:

1 c. sour cream
1/4 c. sugar
1/4 tsp. vanilla

Mix. Spoon into hole. Bake 5 minutes at 300 degrees. They freeze well.
