HIGH FIBER BRAN MUFFINS 
1 1/2 c. Nabisco 100% bran cereal
1 c. skim milk
1 c. flour
1/2 c. sugar
2 1/2 tsp. baking powder
1/2 tsp. baking soda
1 egg (can substitute 1/4 c. Egg Beaters)
1/4 c. melted Fleishmann's butter
Raisins (opt.)

In medium bowl, mix bran and milk until bran is moistened; let stand 5 minutes. In small bowl, combine flour, sugar, baking powder and baking soda. Set aside.

Stir egg and melted butter into bran mixture. Stir in flour mixture just until combined. Do not overmix. Add raisins if desired. Fill greased muffin cups 2/3 full. Bake at 400 degrees for 15 to 20 minutes. This recipe can be doubled.
