EASY BRAN REFRIGERATOR MUFFINS 
1 (15 oz.) Raisin Bran cereal (9 c.)
5 c. flour
3 c. sugar
5 tsp. baking soda
2 tsp. salt
4 eggs
1 c. oil
1 qt. buttermilk

Combine dry ingredients. Beat eggs well. Add oil and buttermilk; mix thoroughly. Store in refrigerator up to 6 weeks. Bake at 400 degrees for 15-20 minutes. Makes 6 dozen muffins.

I used bran flakes, no raisins. I replaced half of the oil with applesauce, 2/3 sugar with Splenda and another 1/3 of sugar with honey. I mixed the batter and divided into separate bowls (cool whip bowls). I added white and semisweet choc chips to one bowl. Toasted pecans and cinnamon to another. I plan to add blueberries to some of the basic batter when I want blueberry. We tried the choc chip first... YUMMY!
