POTATO CASSEROLE 
2 lbs. frozen hash brown potatoes
1/4 lb. butter (little less)

Mix above and set aside.

1 pt. sour cream
1 can undiluted cream of chicken soup
1/2 c. chopped onions (or 1 bunch green onions)
2 c. shredded Cheddar cheese
Salt and pepper

Mix last 5 ingredients and add to potatoes. Mix 1 cup cornflake crumbs and 1/2 cup melted butter and sprinkle on top of casserole. Bake at 350 degrees for 1 hour. (Can be mixed ahead of time and baked later).
