SPICY SKILLET BAKE | |
1 lg. onion, finely chopped 1 bell pepper, finely chopped 1 lb. tofu 1 can (8 oz.) tomato sauce 4 eggs, lightly beaten 1 1/2 tsp. cumin 2 tsp. chili powder 1 tsp. salt 1/2 tsp. garlic powder 1 c. grated cheese Saute onion and bell pepper in a large oven proof skillet over medium heat. Remove from heat and stir in tofu, mashed well with the remaining ingredients. Bake at 375 degrees for 45 minutes. Serves 4 to 6. |
