AUNT GRACE'S COCONUT CAKE 
3 c. sifted flour
2 tsp. baking powder
1/2 tsp. salt
1 c. real butter
1 lb. powdered sugar
4 egg yolks, well beaten
1 c. milk
1 tsp. vanilla
4 egg whites, stiffly beaten

Sift together flour, baking powder, and salt. Cream butter and powdered sugar thoroughly before adding egg yolks. Mix together milk and vanilla. Add flour mixture alternately with the milk to the creamed mixture. Add/fold egg whites into above beaten ingredients. Bake in 3 greased and floured 9 inch cake pans at 375 degrees for 20-30 minutes. Cool. Frost with Never Fail Frosting and sprinkle with very fine grated FRESH coconut.

NEVER FAIL FROSTING:

1 c. sugar
1/4 tsp. salt
1/2 tsp. cream of tartar
2 unbeaten egg whites
3 tbsp. water
1 tsp. vanilla

Combine all ingredients except vanilla in top of double boiler. Beat with electric mixer for 3 minutes until frosting is fluffy and holds its shape. Remove from heat and add vanilla.
