MARINATED VEGETABLES 
1/4 c. salad oil
1/4 c. dry white wine
2 tbsp. vinegar
1 tbsp. snipped parsley
1/2 tsp. sugar
1/4 tsp. dried basil, crushed
1 med. avocado, seeded, peeled and sliced
1 c. sliced fresh mushrooms
2 thin slices onion, separated into rings
3 cherry tomatoes, quartered
Bibb lettuce

For dressing, in a screw top jar, combine oil, wine, vinegar, parsley, sugar, basil, and 1/4 teaspoon salt. Pour over avocado, mushrooms, onion, and tomatoes in a shallow dish. Cover; chill 2-3 hours. Occasionally spoon dressing over vegetables. Drain. Arrange vegetables on lettuce.

Serves 4.
