MARINATED LONDON BROIL | |
1 c. dry red wine 1/2 c. olive oil 2 scallions, minced 4 garlic cloves, minced Salt and freshly ground black pepper 1 tsp. dry mustard 2 tsp. fresh thyme 1/2 c. freshly chopped parsley 1 bay leaf In a large bowl combine all the ingredients. Add the steak coating it completely and let it marinate covered and chilled turning it occasionally for at least three hours or overnight. When ready to cook, remove the marinade and dry and pepper the meat with freshly ground pepper. Grill it over glowing coals for 10 minutes on each side. Transfer to cutting board and let stand for 10 minutes. Cut into thin slices across the grain. |
