CASCIA CONFETTI CHICKEN | |
(Makes 2 pans - one to use, one to freeze. Each serves 4 to 6 people.) 1. Saute the following ingredients together until slightly transparent: 3 average cloves of garlic, minced 3 tbsp. butter 1 med.-lg. onion, chopped (approximately 1 1/2 to 2 c.) 1/2 head celery, chopped including tops (approximately 2 c.) 6-8 med.-lg. fresh mushrooms, sliced 1 tsp. dried basil leaves 1/2 tsp. dill 1/2 tsp. salt 1/4 tsp. pepper II. Blend the following ingredients together in separate large bowl: 2 (10 3/4 oz.) cans Campbell's Cream of Chicken Soup 3/4 c. chopped fresh parsley 4 oz. jar diced pimentos 2 c. plain yogurt ("Mountain High Yogurt" is best) or sour cream 8 oz. sharp Cheddar cheese, shredded 1/2 c. dry sherry (not cream sherry) III. Prepare the following and fold together with (I.) and (II.) above: (Noodle-chicken-sauce mixture should be very creamy-add extra yogurt or some milk if necessary.) 16 oz. (two 8 oz. bags) Martha Gooch "Dumplings" (Or 16 ounce very large egg noodles cooked to barely al dente; approximately 6 to 8 minutes). Rinse with cold water to stop cooking. Drain. Toss in a large bowl with a small amount of oil to prevent "clumping." 2 (3 1/2 lb.) whole chickens Cooked, boned, and cut into irregular bite sized pieces (approximately 4 to 5 cups). Fills two 1 1/2 quart flat greased microwaveable or disposable foil casseroles. Cover with plastic wrap. May be frozen. To heat THAWED casserole, remove from metal pan. Microwave at 50% power (medium) for 10 minutes. Stir carefully. Let rest 5 minutes. Cook at full power (high) for 10 minutes more, or until sauce is evenly "bubbly-hot" and thickened. A conventional oven may also be used: bake, covered, at 350 degrees about 25 to 30 minutes, stirring once. (For best results, THAW FROZEN CASSEROLE FULLY in refrigerator before cooking - allow 10 to 12 hours. This should eliminate excessive noodle breakage that may occur with repeated stirring during microwave thawing. If casserole is frozen in aluminium foil or metal pan, remove to microwaveable container before heating). |
