CAULIFLOWER CHEESE SOUP | |
3 c. chopped potatoes 1 1/2 c. water 1/2 c. chopped celery 1/2 c. chopped carrots 1/4 c. chopped onion 2 c. cauliflower 1 tsp. parsley 1 1/2 tsp. chicken bouillon 1/2 tsp. salt 2 1/4 c. milk 3 tbsp. flour 3/4 lb. Velveeta 1 can corn Combine water, seasonings, and vegetables (except cauliflower). Bring to boil, then simmer 10 minutes. Add cauliflower, then simmer additional 10 to 15 minutes till vegetables are tender. Add milk to flour. Add to vegetable mixture and cook while stirring until thickened. Add cheese, stir till melted. Add corn and heat through. Serves 6 to 8 and is worth the effort! |
