KIWI CAKE 
1 pound cake, make your own or buy your favorite frozen brand name
8 kiwi fruit
1 1/2 c. heavy whipping cream
2 packs Equal sweetener

Trim edges of pound cake to make sides even. Slice cake horizontally into 5 equal slices. Peel and slice kiwi fruit. Starting with 1 slice of cake, place slices of 2 kiwi fruit on cake. Continue to alternate cake and fruit until last layer is in place.

Whip cream to soft peaks, then add Equal or sugar and whip to stiff peaks. Cover entire cake with whipped cream and garnish cake with kiwi fruit. Refrigerate at least 20-30 minutes before serving. Serve on chilled plates. Serves: 4-6. (Prep and Cooking Time: 50 minutes)
