ARTICHOKE PIE | |
1 deep frozen pie crust "Ritz" (bake for 10 min.) 2 pkg. frozen artichoke hearts (coca mia) 2 med. onions, chopped fine 3 cloves garlic, chopped fine Using very little oil slowly cook onion and garlic. Add chopped up artichoke hearts. Cook until they are nice and tender about 25 minutes. Cool. In a large bowl beat up 4 large eggs, 3/4 cup of grated cheese. Add a little onion and garlic powder, chopped parsley and basil. If you need another egg do so, make sure the eggs are really nice and thick now add the artichoke mixture to eggs; mix well. Bake in oven for 20 minutes. Take it out, add 4 slices of muenster or Swiss cheese on top of pie and bake for another 20-25 minutes more at 375 degrees. It can be baked the day before if you wish it can be served hot or cold. It's really great. |
