ARTICHOKE PIE 
1 uncooked pie shell
4 eggs
1/2 c. green peppers, diced
1 c. Mozzarella, shredded
1 pkg. or jar artichoke hearts, drained
1/4 c. grated Parmesan cheese
2 slices onion, cubed
1/2-3/4 c. pepperoni, chopped

Preheat oven to 350 degrees. Beat eggs; add ingredients. Chop artichoke hearts; fold in. Pour into shell. Cook until not runny. Cook approximately 45 minutes. Makes a great appetizer. Cut into small wedges. Serve warm.
