ARTICHOKE PIE 
2 (6 oz.) jars marinated artichokes, drained and diced
4 eggs
1/2 lb. Cheddar cheese, grated
4-6 green onions, chopped
8 soda crackers, crumbled
Salt, pepper, and parsley flakes to taste
1 sm. can diced green chile peppers
1 clove garlic, crushed

In an oven-proof skillet, lightly saute the onions in a little of the oil drained from the artichokes.

In a separate bowl, beat eggs, then add all the other ingredients. Mix well. Pour egg mixture into skillet in which the onions were sauteed. Be sure the skillet bottom and sides are well coated with the oil.

Bake in 325 degree oven for 35 to 40 minutes until mixture is well set. Test for firmness in the middle with a toothpick or knife blade. When done, cut into wedges. Or you can pour mixture into 9-inch square pan. Bake as above, then cut into squares.
