ARTICHOKE PIE 
Garlic
1 can artichoke hearts (drained)
1 sm. pkg. Mozzarella (cut in pieces)
4 eggs
1/2 c. Parmesan cheese
Salt, pepper
1 packaged pie crust

Cut artichokes in pieces and saute in pan with garlic, about 5 minutes, or until browned and tender.

In a bowl mix together eggs, salt, pepper and cheese. Add in sauteed artichokes. Pour in slightly baked pie shell. Bake at 425 degrees for 15 minutes. Reduce heat to 325 degrees and bake for an additional 35 minutes.
