KATES COTTAGE CHEESE BUNS 
3 3/4 - 4 c. flour
2 pkgs. dry yeast
1/2 tsp. baking soda
1 1/2 c. cottage cheese
1/2 c. water
1/4 c. brown sugar
2 tsp. butter
2 tsp. salt
2 eggs

In mixing bowl, put 1 1/2 cups flour, yeast, and soda; set aside. In saucepan, heat cottage cheese, sugar, butter, water, and salt until warm. Add to dry mixture. Add eggs; beat 3 minutes at high speed. By hand, stir in rest of flour. Knead until smooth. Put in greased bowl, turning once. Cover and let rise until double. Punch down. Shape in rolls; let rise. Bake at 375 degrees for 12-15 minutes.
